Farine Bakery

• Bread & grain— Sourdough
  Why

Why this tag: “Farine uses a traditional French bread-making process with levain (natural sourdough) which involves building a healthy wild yeast culture, mixing it with flour and water through an autolyse phase, kneading, bulk fermentation with strategic folds and a cold retard to develop flavors, shaping into loaves by hand, and baking at high heat with steam for a crisp crust.”

Why this tag: “A Levain wheat bread that is a go-to at any time!”
